Harvest Thyme Slaw
Serves 4-6
- 12 oz Broccoli slaw
- 2 C Kale, chop fine
- 2 Golden beets, raw, large grate (optional and pretty)
- 1/2 Tbsp Fresh thyme leaves
- 1 C Pumpkin seeds, roasted and salted
- 1 C Currants
- 1/2 C Dried blueberries
- 1 C Dried cranberries
- 1/2 C dried mango or apricots, snipped
- Salad Girl Organic Sweet & Sassy Dressing
To Prepare Slaw:
Mix all ingredients together. Can be made several hours before serving. Garnish with fresh thyme sprig and snippets of dried mango or apricots.
Optional: Right before serving, add chopped apples or pears.
