January is absolutely the time to celebrate citrus, and this lovely Sicilian Moro Orange Salad is the perfect way to take your taste buds on a trip to sunshiny Sicily! Crisp, fresh baby greens adorned with the bittersweet bite of a juicy, scarlet Moro orange balanced with salty morsels of marinated baby artichoke hearts, Ricotta Salata, and the toasty, rich crunch of pine nuts finished with a drizzle of one of our favorite winter vinaigrettes.

This is one of my favorite salads. Roasted baby carrots are really easy and delicious with our Salad Girl’s Organic Lemony Herb. Add the carrots to your favorite greens with farro, chickpeas, and pepitas. To give our Lemony Herb Vinaigrette a twist, whisk in a bit of tahini. Viola - a hearty salad for a vegetarian meal or add a protein of your choosing. Yum!
