Sicilian Moro Orange Salad
- Serves 6-8
- 4 oz Super Sweet Local Spring Mix
- 1 C Red and White Quinoa
- 1 C each Orange and yellow bell pepper, confetti chop
- 1/2 C jumbo Kalamata olives, julienned
- 1 1/2 C Marinated Artichoke hearts, cut bite sized
- 1/2 can Garbanzo Beans
- 3 Moro oranges (blood oranges) sliced bite-sized fans (approx 1 1/2 C)
- 1 1/2 C crumbled Ricotta Salata cheese
- 1 C toasted Pine nuts
- Salad Girl Organic Lemony Herb, Citrus Splash, or Pomegranate Pear Vinaigrette
To Prepare Salad: Arrange greens upon a pretty platter or divide among 6-8 salad plates. Decorate with quionoa, bell peppers, Moro oranges, Garbonzo beans, artichoke hearts, olives, cheese, pine nuts, and quinoa. Just before serving, drizzle with your choice of Salad Girl Organic Dressing.
