Stone Fruit Asian Slaw
Serves 4
Ingredients:
- 3 ripe but firm organic Very Cherry Plums, sliced bite-size
- 3 ripe but firm HMC Farms Plumcicles, sliced bite-size
- 3 ripe but firm Apricots, sliced bite-size
- 1 (14 oz) bag Kowalski's Broccoli Slaw
- 1 cup roasted & salted cashews
- ½ cup chopped red onion
- ½ cup chopped scallions
- 2 Tbsp chopped fresh mint & cilantro
Creamy Asian Sweet & Sassy Dressing:
- Whisk together:
- ½ bottle Salad Girl Toasted Sesame Ginger
- ½ bottle Salad Girl Sweet & Sassy
- ¼ cup heavy whipping cream
- 2 Tbsp frozen concentrated apple juice
To Prepare:
- In a large bowl, gently toss together the plums, apricots, broccoli slaw, cashews, onion, scallions, and herbs.
- Drizzle with dressing and fold gently to coat, being careful not to mash the stone fruit.
- Serve immediately for a fresh, crunchy, sweet-and-savory salad!
