Buddha Bowl
Serves 3-4
- 4 oz Spring Mix (like MN grown Revol Greens)
- 6-7oz garbanzo beans
- 2 C broccoli, steamed
- 3 C tri-color quinoa, cooked and toasted
- 1/2 C red pepper, diced
- 1/2 C pine nuts, toasted
- Salad Girl Organic Lemony Herb, Curry & Fig, or Toasted Sesame & Ginger Vinaigrette
Happy, Yummy add-on options: chicken, tofu, salmon, feta, parmesan cheese
To Prepare: Fill each bowl with handful of greens and scoop of quinoa. Decorate with other ingredients around the quinoa. Just before serving, drizzle with your choice of Salad Girl.
