Mn Garlicky Wild Rice & Elote Salad
Serves 8-10
Ingredients for Salad:
- 2 cups cooked Minnesota’s Red Lake Nation Minnesota cultivated wild rice cooked in bone broth & cooled
- 3 ears Fire Roasted/Grilled Minnesota sweet corn brush corn with Chili Limon, charred roasted on each side, and slice kernals off when cool
- 3 cups finely chopped kale, stems removed & chopped bite sized
- 1 whole head Minnesota garlic roasted on grill, squeezed from the clove, chop and mashed well & ready for the dressing!
- 6 green onions brushed with chili limon and Charred & grilled quickly & chopped fine
- 1 pint mixed cherry tomatoes Big River Farms, brushed with chili limon grilled/blister, cut in 1/2s
- 1 (15-ounce) can organic black beans, drained, rinsed, and well dried
- ½ cup crumbled Cocheeha (cotija)cheese grated fine
- ½ cup roasted & salted organic pepitas
- 2 limes sliced in 1/2 & brushed with Chili limon and grilled quickly-
Creamy Fire-Roasted Garlic & Chili Limón Dressing
- ½ cup Salad Girl Organic Chili Limón Dressing
- ½ cup Salad Girl Organic Lemony Caesar Dressing
- ½ cup heavy whipping cream
- ¼ cup finely crumbled Cotija cheese
- Roasted garlic from the grilled garlic, squeezed out & finely mashed and chopped! (about 8–10 cloves)
- ¼ cup chopped fresh cilantro
- Juice of 1 grilled lime
- 1 teaspoon local honey
- Freshly cracked black pepper, to taste
Whisk all ingredients together and fold into salad:-) Keep cool(overnight even better!)
Assemble the salad:
In a large serving bowl, combine: all of the above ingredients, pour the dressing over the salad and gently toss until evenly coated, garnish with sliced grilled limes, flowering cilantro sprigs:-) keep cool until ready to serve!
*Serving Suggestions:
This salad is delicious served chilled- Pair it with sliced grilled chicken or salmon or steak, burgers, fish, or shrimp, or enjoy it as a hearty vegetarian main course with the black beans and rice for a whole protein of course!
