7 oz Mixed baby greens
2 ripe Cara Cara and 2 Navel oranges, cut bite size
2 Ruby red grapefruit, sliced bite size
2 ripe avocados, cut bite size
1 C Kalamata olives, sliced
1 C Pepitas, toasted and salted
2 C tofu, sliced bite size

Marinate and Roast Tofu:
Drain tofu, cut into large slices, and blot well between kitchen towels (or use a tofu press). Place on baking dish and cover with Salad Girl Citrus Splash. Marinate 1-2 hours or overnight.
Preheat oven to 400 Fahrenheit, place tofu on parchment-lined baking pan. Bake 20 min, flip tofu, and bake 15-20 min longer (until tofu is light brown along edges). Cool and cut bite-size.
Arrange greens on a platter or individual plates, and decorate with citrus, avocados, olives, tofu, and pepitas. Just before serving, drizzle with Salad Girl Citrus Splash or Pomegranate Pear.
