Liz Harris of Illinois is our first place winner of our Summertime Salad Recipe Contest!
Congratulations, Liz! Your incredible Cha Cha Summer Salad won us over! This salad combines delicious south of the border flavors: fresh avacado, sweet corn, black beans, roasted sweet potatoes, sweet red bell peppers, fresh romaine, and chopped fresh cilantro with our Salad Girl Organic Chile Limon marinated grilled shrimp and pineapple. Wow! What a burst of sweet summertime grilling flavor. I cooked up some Lundberg Family whole grain organic Spanish rice and gently tossed it all together to put on a bed of fresh romaine! Liz, Thank You for being so creative with Salad Girl! We loved this salad!
Kudos to our second place winner, Lora Johanson of Michigan. Lora used veggies from her garden: blueberries picked from a Michigan berry farm, organic Michigan Bacon, and our Salad Girl Organic Blueberry Basil Dressing for her award winning Beet, Blueberry, & Bacon Salad.
Cheers to our third place winner, Alison Ngyuen of Minnesota. Alison combined some local Minnesota ingredients with a touch of her own heritage using: edamame, ripe Asian plums, roasted cashews, fresh chopped kale, mint, basil, spicy red thai chile peppers, and our own Salad Girl Organic Toasted Sesame & Ginger Dressing giving this wild rice salad a sassy Minnesotan-Asian twist!
We had so many favorites we also awarded some honorable mentions: Deborah Comasta of Minnesota with her quick & easy Summer Slaw, Hidemi Walsh of Indiana for her Simple Soba Noodle Salad, Wai Leng Loke of Illinois for a great Triple Bean Salad, and special mention to Candy Barnhart all the way from Hawaii for her Zesty Summer Rainbow Fruit Salad.
All of the "honorable mentions" recipes noted above will be posted this fall, so keep an eye open for some really great salads using just picked, ingredients and Salad Girl Organic Dressings!
